Ingredients:
2 cups Kodo Idly Ravva
1 cup Urad Dal (split black gram)
1 tsp Fenugreek seeds
Salt as needed
Water for soaking and grinding
Method:
Wash urad dal and fenugreek seeds thoroughly. Soak them in water for 4–5 hours.
Soak Kodo Idly Ravva separately for 2 hours.
Grind the urad dal into a smooth, fluffy batter by adding little water gradually.
Drain excess water from the soaked Kodo Idly Ravva and mix it with the urad dal batter.
Add salt and mix well. Leave the batter to ferment overnight (8–10 hours) in a warm place.
Grease idli moulds, pour the fermented batter, and steam for 10–12 minutes.
Remove carefully and serve hot with chutney or sambar.
Ensure the batter is well-fermented—it gives the idlis their softness.
Do not add too much water while grinding. The batter should be thick but fluffy.
